Here's a recipe for Mexican Ice Cream to help celebrate Cinco de Mayo.

Ingredients:
--1 pint vanilla or coffee ice cream , softened in microwave--defrost about 30 seconds
--2 cups corn flakes
--2 tsp. ground cinnamon
--honey, for drizzling

Scoop out ice cream into small bowls. Crush corn flakes in your hands or in a plastic baggie (kids love this part) and top with ice cream. Sprinkle with cinnamon & drizzle with honey.
